Melt In Your Mouth Butter Cookies

- 1 cup (2 sticks) butter, softened shopping list
- 1/3 HEAPING cup powdered sugar shopping list
- 1 teaspoon vanilla extract shopping list
- 1 cup flour shopping list
- ¾ cup cornstarch shopping list
- dash of salt shopping list
How to make it
- Cream together butter, sugar and vanilla.
- In separate bowl, mix together flour, cornstarch and salt; stir into creamed mixture.
- Drop by spoonfuls onto lightly greased cookie sheet, flattening cookies with your fingertips (don’t flatten too thin or cookies will break) and keep in a round shape. NOTE: I have found recently, that this dough is actually easy to pick up a small piece and roll into a ball (should be about the size of an acorn), then place on a lightly greased cookie sheet and flatten gently with the palm of your hand...much easier than trying to drop by spoonful and then shape into a circle!
- Bake at 350 degrees for 14 minutes, until just barely browned on top or around the edges.
- Cool several minutes; remove carefully from cookie sheet...the cornstarch and powdered sugar make these cookies very crisp and delicate, and they will break easily if not handled with a gentle hand!
- Cool on waxed paper; frost with powdered sugar frosting, tinting it a soft pastel, if desired.
- NOTE: My daughter's favorite frosting on these is the Browned Butter Caramel frosting that I have posted separately.
