Ingredients
  • 1 cup (2 sticks) butter, softened
  • 1/3 HEAPING cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • ¾ cup cornstarch
  • dash of salt

Directions
  1. Cream together butter, sugar and vanilla.
  2. In separate bowl, mix together flour, cornstarch and salt; stir into creamed mixture.
  3. Drop by spoonfuls onto greased cookie sheet, flattening cookies with your fingertips (don’t flatten too thin or cookies will break) and keep in a round shape.
  4. NOTE: if you chill the dough a half hour or so, they will be easier to pat out into circles. I can never wait that long, so the dough is quite sticky and soft, requiring a bit more work.
  5. Bake at 350 degrees for 12 minutes, until very lightly browned around edges.
  6. Cool several minutes; remove carefully from cookie sheet...the cornstarch and powdered sugar make these cookies very crisp and delicate, and they will break easily if not handled with a gentle hand!
  7. Cool on waxed paper; frost with powdered sugar frosting, tinting it a soft pastel, if desired.
  8. NOTE: My daughter's favorite frosting on these is the Browned Butter Caramel frosting that I have posted seperately.

Sounds like a good recipe, will bookmark to make this winter. Oh forgot I have a small convection oven that bakes also, could do them in it this summer.

Congratulations on your new home, Krumkake! I just made some butter cookies the other day that came out like hockey pucks but they were flavored well. That'll teach me for trying a recipe that wasn't in Group Recipes! Even our city crows wouldn't touch the ones I made! Your recipe looks so much better and if you say they're good, they must be good!
