This Chutney is very good and can be used in many dishes...It's very good with Rosemary and Garlic marinated Cuts such as Lamb,Beef,Chicken,Fish etc....

Ingredients
- 4 cups rough chopped Onions (1in. size pieces )
- 3 large Red Bell Peppers.Rough chopped (1In. size pieces)
- 1-2 Serrano Chili. fine diced
- 1 teaspoon salt
- 1/4 cup Golden Raisins
- 2 Pinches of Saffron
- 1/2 cup Cider Vinegar
- 1/4 cup Water
- 1/4 cup granulated Sugar
- 2 tablespoons chopped fresh Cilantro
Directions
- Over an open flame such as a Stove Burner or BBQ Charre Bells whole till nice and Charred Cool Then dice.
- Peal Onions and slice in to 1 in. thick Onion Ring Discs keeping rings together in tack. Charre like the Bells.Cool then dice.
- Charre the Serrano Pepper. Cool then fine dice
- In a large sauce pan add all ingredients except Cilantro
- Cook on medium heat 30 minuts give or take stirring Occasionally
- When Cutney is nice and thick remove from heat and stirr in the Cilantro...
