This Chutney is very good and can be used in many dishes...It's very good with Rosemary and Garlic marinated Cuts such as Lamb,Beef,Chicken,Fish etc....

Ingredients
  • 4 cups rough chopped Onions (1in. size pieces )
  • 3 large Red Bell Peppers.Rough chopped (1In. size pieces)
  • 1-2 Serrano Chili. fine diced
  • 1 teaspoon salt
  • 1/4 cup Golden Raisins
  • 2 Pinches of Saffron
  • 1/2 cup Cider Vinegar
  • 1/4 cup Water
  • 1/4 cup granulated Sugar
  • 2 tablespoons chopped fresh Cilantro

Directions
  1. Over an open flame such as a Stove Burner or BBQ Charre Bells whole till nice and Charred Cool Then dice.
  2. Peal Onions and slice in to 1 in. thick Onion Ring Discs keeping rings together in tack. Charre like the Bells.Cool then dice.
  3. Charre the Serrano Pepper. Cool then fine dice
  4. In a large sauce pan add all ingredients except Cilantro
  5. Cook on medium heat 30 minuts give or take stirring Occasionally
  6. When Cutney is nice and thick remove from heat and stirr in the Cilantro...
