  • Plain ole' Country Corn Fritters
  • =========================================
  • 1 small can of whole kernel corn, drained (reserving the liquid)
  • Milk (to the reserved corn liquid to measure 1 cup)
  • 1-1/2 cups of flour
  • 3 teaspoons of baking powder
  • 3/4 teaspoons of salt
  • 1 egg, beaten

Directions
  1. ==========================================
  2. Add enough milk to the reserved corn liquid to measure 1 cup.
  3. Sift together the dry ingredients.
  4. Combine the egg, milk mixture, and corn and add to the dry ingredients.
  5. Mix just until moistened.
  6. Drop batter from a tablespoon into deep, hot oil.
  7. Fry until the fritters are golden brown, 3 to 4 minutes.
  8. Drain well on paper towels.

I decided to try these fritters last weekend to have with my supper. When I took the first batch out of the deep frier they looked soooo good I tried one right away, split with some butter. Oh boy they tasted so incredible that I ate another & couldn't stop. By the time the batch was all cooked I had no room left for supper. I told a friend at work & he asked for the recipe & he commented to everyone at work, now they all want the recipe. Don't anyone pass this recipe by. Your tummies will love you for it. Wonderful! I'm a corn lover, but hadn't had corn fritters in years! I don't currently have a deep fryer, so I cooked them in about 3/4 inch hot oil in a big iron skillet. After the bottom browned, I turned them with a slotted spoon. They are absolutely delicious! If you have a sweet tooth like I do, just a little powdered sugar sprinkled on top is great, but they're great without it (I ate some both ways)!


My Mom use to make corn fritters for us when we were growing up. Love them, I will make these today and let you know how they turned out. Thanks for the post.

Made this today. My first fried food in years. Taste pretty good but I think next time I'll sweeten up the batter a little.

Had to add this wonderful recipe to the 'I made it' group. I loved them when I first made them & still make them often cause they go with so many meals. One of the best recipes I have ever tried.
