This is one of those dishes you make when you are craving a variety of things at once! I love the use of Lasagna noodles in this. I believe you will too!

Ingredients
  • 1 box of Lasagna noodles, broken into fourths (cooked according to package directions, drained
  • 1 stick butter plus 2 tablespoons melted
  • 1 pound sliced mushrooms
  • 2 cups heavy cream
  • 1 cup tiny or petite peas(green) or 1 can asparagus tips
  • 1/2 cup sliced green onions
  • 1/2 cup freshly grated Parmesan cheese
  • 4 slices bacon cooked crispy and crumbled
  • salt and pepper to taste
  • *if you prefer, you can cook noodles whole and then cut them into whatever size pieces you desire

Directions
  1. Cook noodles according to package directions.
  2. Drain pasta and place in serving dish.
  3. Drizzle the 2 tablespoons melted butter and toss to coat.
  4. Sprinkle noodles with salt and pepper.(just a little)
  5. Saute mushrooms and green onions in butter until tender.
  6. Stir in heavy cream and peas and cook over low simmer until reduced to almost half (about 5 minutes, making sure you do not scorch).
  7. Pour over noodles and top with grated Parmesan, crumbled bacon and season with salt and pepper.
