How to make it

  • Combine all of the vegetables in a mixing bowl, add the mint and toss to mix
  • drizzle the lemon juice and is much olive oil as you desire over the mixture, and toss to coat.
  • Add the feta when getting ready to serve. Season to taste with black pepper.
  • If making this ahead of time -- put in the refrigerator to keep cool, and bring out a little before serving to let warm slightly -- this allows the flavors to come out a bit.

    Hi Ray
    Your salad is very close to a "Horiatiki Salata" (Greek Country Salad)The differences being that your's uses mint instead of the more common oregano and the other usually has Kalamata olives in it too. The Horiatiki Salata can be made with either vinegar or lemon juice. I used to work with a Greek girl years ago and she said that they always made it with lemon juice but I've seen the recipe with either. Your version sounds delicioius and I think that the mint would be a refreshing addition. I have it bookmarked to try.

    Hey Ray darlin' - this sounds so delcious! I love Mediterranean flavors and this has the classics. I really like your mint addition here - and I bet it does taste so lovely and fresh.
