Filet Mignon and Blue Cheese Flatbread

- 1 TBS olive oil shopping list
- 1 1/2 tsp crushed or minced garlic shopping list
- 1 cup thinly sliced Vidalia shopping list
- 1 tsp olive oil 4 whole wheat pita pockets( 6 inch wide) or similar healthy flatbread shopping list
- 1 cup shredded reduced fat cheddar and Jack blend shopping list
- 1/3 cup crumbled blue cheese or gorgonzola shopping list
- 5 ounces thinly sliced strips of keand roast beef or grilled filet mignon shopping list
How to make it
- Preheat oven to 450
- combine 1 TBS olive oil with crushed garlic and set aside
- with 1 tsp olive oil in fry pan saute onion over medium -high heat until nicely browned(about 4 min)
- place breads on a nonstick baking sheet
- brush with oil garlic mixture
- combine cheeses then spread evenly over the pita pockets
- garnish tops with the beef and caramelized onion
- bake in center of oven for 8-10 minutes.
