Cherylanns Zucchini Surprise

I let my zucchini garden go wild and ended up with so much zucchini , not only did I give a lot away, I ended up with a new Zucchini Surprise every night. This one is my favorite, I hope you enjoy.
Ingredients
- 4 Tbsp. butter shopping list
- 3 medium zucchini, halved lengthwise, and cut into 1/4"slices shopping list
- 1 small onion, chopped shopping list
- 1 can diced tomatoes, juice included shopping list
- 1 can whole kernel corn, drained shopping list
- 1/4 cup ripe olives, quarted shopping list
- salt to taste shopping list
- 1 cup shredded colby jack cheese shopping list
How to make it
- In a large fry pan over medium-high heat. Melt butter in pan.
- Add zucchini and onion and saute till the onion is translucent, stirring frequently.
- Add diced tomatoes; reduce heat to medium and cook for 15 minutes. Zucchini should be completely cooked by now.
- Add corn, olives, and salt to taste. Stir well. Heat through.
- Top with cheese, let melt. Serve

I grew up with the typical "abundant zucchini" situation. We made, ate, and gave away MANY zucchini year after year! To this day I find it difficult purchasing it in a store! LOL It's good to be armed with many good zucchini recipes.
