I grew up with the typical "abundant zucchini" situation. We made, ate, and gave away MANY zucchini year after year! To this day I find it difficult purchasing it in a store! LOL It's good to be armed with many good zucchini recipes.

Sounds wonderful! I've eaten zucchini with tomato many, many, many times and love it! I also love corn, black olives, and cheese. This is so full of my favorites that I have to love it!
