Zucchini Cake with Sour Cream Frosting

- 3 cups grated zucchini shopping list
- 3 cups sugar shopping list
- 1 1/2 oil shopping list
- 4 eggs shopping list
- 2 tsp baking powder shopping list
- 1 1/2 tsp cinnamon shopping list
- 3 cups flour shopping list
- 1 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 2 tsp vanilla shopping list
- 1 cup chopped nuts shopping list
- FROSTING: 2 1/2 cup confectioner's sugar shopping list
- 1/3 cup cup sour cream shopping list
- 1/4 cup shortening shopping list
- 3/4 tsp vanilla shopping list
- 1/8 tsp salt shopping list
How to make it
- Grease and flour an angel food pan (not a bundt pan)
- Mix zucchini, sugar, oil, eggs, and vanilla.
- Combine the dry ingredients in separate bowl. Add to the zucchini mixture.
- Stir in the nuts.
- Pour into pan. Bake at 325 degrees for 1 1/2 hr.
- Cool 15 to 20 minutes. Remove from the pan.
- When cool, frost with sour cream frosting.
- FROSTING: With mixer at low speed, combine all ingredients until well mixed.
- Increase speed to high. Beat 1 minute until smooth and fluffy.
