How to make it

  • Grease and flour an angel food pan (not a bundt pan)
  • Mix zucchini, sugar, oil, eggs, and vanilla.
  • Combine the dry ingredients in separate bowl. Add to the zucchini mixture.
  • Stir in the nuts.
  • Pour into pan. Bake at 325 degrees for 1 1/2 hr.
  • Cool 15 to 20 minutes. Remove from the pan.
  • When cool, frost with sour cream frosting.
  • FROSTING: With mixer at low speed, combine all ingredients until well mixed.
  • Increase speed to high. Beat 1 minute until smooth and fluffy.

    I adore zucchini cakes - so moist and flavorful. This is an interesting frosting (never tried a sour cream frosting), and I can't wait to try it on this cake. Thank you!

    I love zucchini, but I'm glad I don't have to make pickles, bread, stuff it or anything else unless I want to anymore. I don't miss it.

    This sounds like something I very much want to try...sour cream frosting.....very nice!
