Irish Omelet

Im irish so I love these.....alittle different from the traditional ones...
Ingredients
- 1 large potato, cooked shopping list
- 4 egg yolks shopping list
- 4 egg whites shopping list
- salt and pepper to taste shopping list
- juice of 1 lemon shopping list
- 1 Tablespoon chopped chives or onion shopping list
How to make it
- Mash the potato; add egg yolks; mix well.
- Add salt, pepper, lemon juice and chives.
- Beat egg whites until stiff.
- Fold into potato mixture.
- Spray skillet with cooking spray.
- Use a large spoon and drop omelets into medium hot skillet.
- Cook until done.
