Great post. I also love potatoes and am "Irish" to a large extent. I had an uncle who was once quizzed about being 'irish' and he said "There's enough Quinn's, Flynn's and O'Shea's in my family to provoke an all-out fist fight in any church in the country". Never new exactly what he meant, but I got the gist.
Have a grand cooking day,
JJ

Ok I'm probably not Irish but this sounds great. Here is the not Irish part. Could I make instant mashed potatoes and use in this? Then it would be quick and cheap. Oh to be young again. L.
