Found this recipe in the Econo Foods grocery ad. I am going to try it tonight, but will add 1 minced garlic clove and 1/4 teaspoon of ground allspice.

Ingredients
  • 1 1/2 lbs finely ground lean beef ( could try ground turkey)
  • 1 egg
  • 1 Tbsp. finely chopped onion ( I will add more )
  • 1 cup finely diced cooked potatoes
  • 1 Tbsp. salt ( I will only use 1tsp.)
  • 1/4 tsp. pepper
  • 1 cup finely diced cooked beets
  • ( 1 minced garlic clove)
  • ( 1/4 tsp. allspice)
  • Butter for frying

Directions
  1. Combine meat with egg, salt, pepper, garlic and allspice.
  2. Mix very well.
  3. Carefully mix in onion, potatoes and beets.
  4. Shape meat mixture into six large flat patties.
  5. Melt butter in a large skillet.
  6. When butter turns golden brown, add patties.
  7. Fry until golen brown; turn and fry other side until desired doneness.
  8. Serve patties topped with fried eggs.
  9. ( I will skip the fried eggs and serve with a green salad and maybe a rice or barley side dish.)

Beets? Wow, very unique...thanks for sharing this!


Do not use the tablespoon of salt. I used 1 tsp. and that was fine, probably a mis-print in the paper. Otherwise these were quite tasty, could be made into balls and served with a cream sauce or a tomato based sauce.


I'm not a big fan of beets but this sounds delicious!
