White Chocolate Macadamia Nut Cupcakes Recipe

A delicious way to turn white chocolate macadamia nut cookies into cupcakes!! Especially delicious right after coming out of the oven

Ingredients
  • 1 package white cake mix without pudding in the mix
  • Ingredients needed for cake mix
  • 1 package (4 servings) white chocolate instant pudding and pie filling mix
  • 3/4 cup chopped macadamia nuts
  • 1 1/2 cups flaked coconut
  • 1 cup white chocolate chips
  • 1 (16 oz) can white frosting

Directions
  1. Preheat oven to 350 degrees
  2. Line muffin tin with 20 baking cups
  3. Prepare cake mix according to box, mixing in pudding mix
  4. Fold in Nuts
  5. Spoon into muffin cups, filling 2/3 full
  6. Bake 18-20 minutes
  7. Cool cupcakes on wire rack
  8. Spread coconut on baking sheet and toast at 350 degrees for about 6 minutes until golden brown. Cool slightly.
  9. Microwave chocolate chips until melted, usually takes about 2 minutes stirring every 30 seconds
  10. Mix melted white chocolate chips into frosting
  11. Frost cupcakes and top with toasted coconut

Oh yeah! This is a great sounding recipe, and I just love toasted coconut...perhaps this will be the next "office potluck" recipe to try (gotta have help eating these, or I KNOW I'd be in trouble!)...thanks!
