Ingredients

How to make it

  • Preheat oven to 350 degrees
  • Line muffin tin with 20 baking cups
  • Prepare cake mix according to box, mixing in pudding mix
  • Fold in Nuts
  • Spoon into muffin cups, filling 2/3 full
  • Bake 18-20 minutes
  • Cool cupcakes on wire rack
  • Spread coconut on baking sheet and toast at 350 degrees for about 6 minutes until golden brown. Cool slightly.
  • Microwave chocolate chips until melted, usually takes about 2 minutes stirring every 30 seconds
  • Mix melted white chocolate chips into frosting
  • Frost cupcakes and top with toasted coconut

    Oh yeah! This is a great sounding recipe, and I just love toasted coconut...perhaps this will be the next "office potluck" recipe to try (gotta have help eating these, or I KNOW I'd be in trouble!)...thanks!
