Blueberry Pound Cake Loaf Recipe

Ingredients

1 3/4 cup flour

1 tsp baking powder

1/4 tsp salt

1/4 tsp cinnamon

1 1/2 sticks butter

1 cup sugar

3 eggs

1 tsp lemon juice

1/2 cup apple juice

1 1/2 cup fresh blueberries

Glaze:

2/3 cup powdered sugar

2 tsp apple juice or as needed.

Directions

Combine flour, baking powdr, salt and cinnamon.

Cream butter and sugar until light and fluffy.

Add eggs one at a time and mix well,

Add the lemon juice, apple juice and mix well.

Add dry ingredients and blend until just mixed.

Toss berries with a bit of flour and gently fold berries into batter.

Place mixture in a greased and floured loaf pan.

Bake in a preheated 350F oven about 1 hour or tested done.

Cool 15 minutes and remove from pan.

Cool completely in rack.

Mix glaze and pour over loaf

Interesting recipe. I was looking for something last night, in my kitchen to make because my grandson had a sweet tooth and I had not been to the grocery store,( I go on Fridays.) I have all the ingredients to make this but I didn't know it!
