Easy Dijon Chicken Cutlets-ci

- 6-8T Dijon mustard shopping list
- juice from 1/2 lemon shopping list
- 4 green onions, sliced shopping list
- 1-2t dill weed shopping list
- 1/2 cup bread crumbs(or crushed croûtons, any flavor) shopping list
- 8 boneless, skinless chicken breasts shopping list
- 4T butter, divided, 2T melted shopping list
- 2T olive oil shopping list
- **fresh baby spinach, your favorite vinaigrette whisked with another bit of Dijon, OR cooked linguine tossed with freshly grated parmesan cheese, for serving** shopping list
How to make it
- In small bowl whisk together mustard, melted butter, lemon juice, onions and dill weed.
- Rinse chicken breasts and pat dry.
- Brush mustard mixture on chicken breasts or toss in large zipper bag to coat each breast.
- Spread bread crumbs in shallow dish or cookie sheet and dip moistened chicken into crumbs.
- Heat remaining butter and olive oil in skillet and cook each breast every medium heat 5-7 minute on each side, turning once, until browned and internal temperature is 165-170.
- Serve sliced over baby greens with a vinaigrette or over cooked linguine lightly tossed with Parmesan cheese and olive oil.
