Ingredients
  • 6 to 8 large tomatoes, cubed and cooked
  • 1 onion, chopped
  • 5 cloves garlic, minced
  • 1 cup chopped celery with leaves
  • 4 cups chicken broth
  • 1 stick butter
  • 1 to 2 tablespoons finely chopped fresh basil
  • 1 1/2 cups heavy cream
  • cracked black pepper
  • salt to taste
  • 1 teaspoon creole spice
  • 4 slices of crisp cooked bacon, crumbled
  • shredded Parmesan cheese
  • croutons

Directions
  1. Saute onions, celery, and garlic in butter until tender.
  2. Place cooked tomatoes in blender, add onion mixture and process in blender until smooth,
  3. In medium saucepan, bring broth to a boil.
  4. Add tomatoes, onion mixture and bacon,
  5. Lower heat to med/low and cook for 10 minutes, stirring occasionally.
  6. Season with creole spice, salt and pepper.
  7. Stir in heavy cream and continue to cook on low heat for 2 to 3 minutes
  8. Ladle over croutons and sprinkle with Parmesan cheese.

This is a fantastic recipe! I love tomato soup but never had it your way and your way sure beats mine!


Makes me long for winter and cooler days and a good bowl of hot soup...this sounds fantastic, d - thank you for sharing it. It will be on the table for sure when cool weather arrives!


MMM..love fresh basil, and can't go wrong with cream! I'm looking forward to trying this one. The bacon is a nice addition, too.....thanks for the recipe.
