Rum Cashews

- 1 cup sugar shopping list
- 3/4 cup dark or light rum shopping list
- 2 cups whole unsalted cashews shopping list
- 1/4 cup (1/2 stick) butter shopping list
How to make it
- Combine sugar and rum in medium-sized saucepan.
- Bring to boiling; cook 3 minutes or until syrup registers 234 degrees on a candy thermometer.
- Remove from heat .
- Immediately add cashews; stir to coat with syrup.
- (Sugar will become white and grainy after about 30 seconds.)
- Return saucepan to medium heat; stir constantly to remelt sugar.
- Add few drops of water to hasten remelting, if necessary.
- When sugar turns a golden brown, remove from heat.
- Stir in butter.
- Spread coated nuts on well oiled cookie sheet. Use a fork to separate pieces that hace stuck together.
- Cool completely.
- Store nuts in airtight container.
