This rich, nut candy is very good as well as unique and makes a wonderful gift during the holidays!

Ingredients
  • 1 cup sugar
  • 3/4 cup dark or light rum
  • 2 cups whole unsalted cashews
  • 1/4 cup (1/2 stick) butter

Directions
  1. Combine sugar and rum in medium-sized saucepan.
  2. Bring to boiling; cook 3 minutes or until syrup registers 234 degrees on a candy thermometer.
  3. Remove from heat .
  4. Immediately add cashews; stir to coat with syrup.
  5. (Sugar will become white and grainy after about 30 seconds.)
  6. Return saucepan to medium heat; stir constantly to remelt sugar.
  7. Add few drops of water to hasten remelting, if necessary.
  8. When sugar turns a golden brown, remove from heat.
  9. Stir in butter.
  10. Spread coated nuts on well oiled cookie sheet. Use a fork to separate pieces that hace stuck together.
  11. Cool completely.
  12. Store nuts in airtight container.

Might want to edit so it shows the 1/4 c. butter. DOUBT anyone would put 14 c., but then again, there are newbs here too!
I think I am going to be inspired and do this w/ almonds. I bought 50# this year, so they are the NUT of choice currently.
