Toscana Soup Recipe
This recipe is supposed to be a clone of "Olive Garden" Version. Simple and easy. Lots of flavor.

Ingredients
  • 1 1/3 Cup Chicken stock or Broth
  • 1/2 Cup Heavy Cream
  • 2 Medium Potato cut to 1/2 in cubes w/skin
  • 4 cups chopped Kale
  • 1 lbs Spicy Italian Sausage
  • 1/2 Tsp Kosher Salt
  • 1/2 Red Pepper Flakes

Directions
  1. Grill or saut'e Italian sausage. After it is cooked and cooled cut slices 1/2 thick. Dice Potato and chop up Kale.
  2. Combine stock and cream in a sauce pan over medium heat
  3. Add diced potato and sausage to sauce pan
  4. Add chopped kale and spices
  5. Let simmer for one hour
