Ingredients
  • 36 Ritz crackers, divided
  • 1 pkg (8 oz,) Cream cheese, softened
  • 1/4 C 100% grated Parmesan cheese
  • 1/4 C mozzarella. shredded
  • 1/2 C chopped, drained canned artichoke hearts

Directions
  1. Preheat oven to 350
  2. Crush 4 of the crackers, place in a shallow dish and set aside
  3. Mix cheeses and artichokes until will blended
  4. Shape 2 Tsp of the cheese mix into 32 balls. If cheese is too soft, refrigerate until firm
  5. Roll in cracker crumbs until evenly coated
  6. Place in a single layer on wax paper-covered tray; refrigerate 30 minutes
  7. Arrange the remaining 32 crackers on a baking sheet; top each with a cheese ball
  8. Bake 10 minutes or until heated through
  9. Note: These can be made ahead and refrigerated up to 24 hours and served cold
  10. Note: Add toasted sesame seeds; chopped fresh dill or chives; finely chopped red, green or yellow peppers to the crumbs or omit crumbs completely and coat only in one of the alternatives
