Artichoke Cheese Puffs

- 36 Ritz crackers, divided shopping list
- 1 pkg (8 oz,) cream cheese, softened shopping list
- 1/4 C 100% grated parmesan cheese shopping list
- 1/4 C mozzarella. shredded shopping list
- 1/2 C chopped, drained canned artichoke hearts shopping list
How to make it
- Preheat oven to 350
- Crush 4 of the crackers, place in a shallow dish and set aside
- Mix cheeses and artichokes until will blended
- Shape 2 Tsp of the cheese mix into 32 balls. If cheese is too soft, refrigerate until firm
- Roll in cracker crumbs until evenly coated
- Place in a single layer on wax paper-covered tray; refrigerate 30 minutes
- Arrange the remaining 32 crackers on a baking sheet; top each with a cheese ball
- Bake 10 minutes or until heated through
- Note: These can be made ahead and refrigerated up to 24 hours and served cold
- Note: Add toasted sesame seeds; chopped fresh dill or chives; finely chopped red, green or yellow peppers to the crumbs or omit crumbs completely and coat only in one of the alternatives
