Citrus Tequila Fajitas

- 12 ounces beef flank steak shopping list
- 3 tablespoons frozen orange juice concentrate thawed shopping list
- 3 tablespoons tequila shopping list
- 2 tablespoons lime juice shopping list
- 1 teaspoon grated gingerroot shopping list
- 1/2 teaspoon dried oregano crushed shopping list
- 1/8 teaspoon salt shopping list
- 1/8 teaspoon ground red pepper shopping list
- 1 clove garlic minced shopping list
- Four flour tortillas shopping list
- 1/2 red or yellow sweet pepper cut into strips shopping list
- 1/2 small white onion sliced and separated into rings shopping list
- Sliced fresh chili peppers shopping list
How to make it
- Score meat by making shallow cuts at 1" intervals diagonally across steak in a diamond pattern.
- Repeat on the other side then place meat in a plastic bag set in a shallow dish.
- For marinade stir together juices, tequila, gingerroot, oregano, salt, red pepper and garlic.
- Pour over meat in bag then close bag and marinate 30 minutes at room temperature.
- Turn occasionally to keep well marinated then drain meat and reserve marinade.
- Place meat on unheated rack of a broiler pan and broil 3" from heat for 15 minutes turning once.
- Thinly slice meat diagonally across the grain.
- To warm tortillas wrap in foil then place beside broiler pan during last 8 minutes cooking meat.
- Meanwhile pour reserved marinade into a small saucepan then stir in pepper strips and onion.
- Bring to boiling then reduce heat and simmer uncovered for 5 minutes.
- To serve immediately fill warmed tortillas with beef.
- Using a slotted spoon pour pepper onion mixture over beef then sprinkle with peppers and roll.
