This is an awesome fajita recipe I picked up at an estate sale along the way. Incredible taste and incredily tender. Enjoy

Ingredients
  • 12 ounces beef flank steak
  • 3 tablespoons frozen orange juice concentrate thawed
  • 3 tablespoons tequila
  • 2 tablespoons lime juice
  • 1 teaspoon grated gingerroot
  • 1/2 teaspoon dried oregano crushed
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground red pepper
  • 1 clove garlic minced
  • Four flour tortillas
  • 1/2 red or yellow sweet pepper cut into strips
  • 1/2 small white onion sliced and separated into rings
  • Sliced fresh chili peppers

Directions
  1. Score meat by making shallow cuts at 1" intervals diagonally across steak in a diamond pattern.
  2. Repeat on the other side then place meat in a plastic bag set in a shallow dish.
  3. For marinade stir together juices, tequila, gingerroot, oregano, salt, red pepper and garlic.
  4. Pour over meat in bag then close bag and marinate 30 minutes at room temperature.
  5. Turn occasionally to keep well marinated then drain meat and reserve marinade.
  6. Place meat on unheated rack of a broiler pan and broil 3" from heat for 15 minutes turning once.
  7. Thinly slice meat diagonally across the grain.
  8. To warm tortillas wrap in foil then place beside broiler pan during last 8 minutes cooking meat.
  9. Meanwhile pour reserved marinade into a small saucepan then stir in pepper strips and onion.
  10. Bring to boiling then reduce heat and simmer uncovered for 5 minutes.
  11. To serve immediately fill warmed tortillas with beef.
  12. Using a slotted spoon pour pepper onion mixture over beef then sprinkle with peppers and roll.
