Ingredients
  • 4 Tablespoons Butter
  • 1/4 Pound Fresh Mushrooms,chopped
  • 1 Small onion,minced
  • 1 Garlic Clove,minced
  • 1-1/2 teaspoons Salt
  • 1/2 teaspoon Pepper
  • 1/2 teaspoon Dried Thyme Leaves
  • 1/8 teaspoon Ground Allspice
  • 3/4 Pound Sweet Italian Sausage Links
  • 3/4 Pound Ground Turkey
  • 1 Large Egg
  • 1 (4oz) Jar Pimentos,drained
  • 1/2 Cup Shelled Pistachios
  • 3 Tablespoons Good Brandy
  • 2 Tablespoons Chopped Parsley
  • 1 (10oz) Bag Spinach

Directions
  1. In skillet,,melt butter,cook,mushroom,onion,garlic,salt,pepper,thyme, and allspice until onion is tender and mushrooms are golden brown.
  2. Remove casing from sausage link,combine in bowl the mushroom mixture,sausage meat,ground turkey,egg,pimentos,pistachios,brandy and chopped parsley.
  3. With spoon,blend mixture very will.
  4. Run spinach leaves under very hot tap water until wilted,pat dry with towel.
  5. Brush bottom and sides of 8x4" loaf pan with 1 tablespoon melted butter.
  6. Line bottom and sides of pan with spinach leaves,overlapping them,allowing leaves to hang slightly over sides of pan.
  7. Spoon meat mixture into pan,packing it carefully to press out air pockets.
  8. Fold spinach leaves over mixture,cover with more spinach leaves to enclose meat mixture completely.
  9. Cover pan with foil and bake in a 350 degree oven for 1-1/4 Hours or until mixture pulls away from sides of pan and juices run clear.
  10. Cool pate in pan slightly on wire rack until easy to handle.
  11. Drain off excess fat.
  12. Cover pate in pan with foil wrapped cardboard,cover loosely with plastic wrap,place cans on top to weight down pate,refrigerate overnight.
  13. To serve,remove weight from pate,Dip pan in hot water a few seconds,lift from water and run metal spatula between pate and pan sides,invert onto cutting board.
  14. Scarpe off fat,Slice pate,serve with crackers or flat bread.
