My grandson's favorite food is pizza...what 7 1/2 year old doesn't love pizza?! So I surprised him this morning with one for breakfast. He was one happy camper before he hit the road back to Michigan!

Ingredients
  • 2 unbaked pizza crusts - or even Bobolis (I use Gluten-Free Pantry pizza mix to make this gf)
  • 4 links sweet Italian sausage, cooked, crumbled, drained
  • 1/2 package (from a 30 oz. bag) shredded hash brown potatoes, thawed
  • 1 egg, beaten
  • good olive oil
  • 2 cloves garlic, minced
  • oregano, to taste
  • 7 oz. pkg Sargento Bistro Blend sun-dried tomato and basil mozzarella
  • fresh ground black pepper

Directions
  1. Spread dough on 2 round pizza pans, forming edge as you go.
  2. Mix thawed hash browns with the beaten egg; set aside.
  3. Drizzle olive oil over each crust. Scatter garlic evenly over each pizza and then sprinkle oregano lightly over garlic. Use your hand and spread the oil and seasonings evely over both crusts.
  4. Divide hash brown mixture evenly between pizzas and spread to edges. Divide sausage between both and scatter evenly over pizzas. Divide cheese between both and distribute evenly over pizzas.
  5. Bake at 450 for 15 minutes, switch positions of pizzas and bake another 15 minutes until toppings are melted and lightly browned and the bottom of the crusts are browned, too. Slice and enjoy.
  6. NOTE: You can vary the toppings to suit yourself - anything you like in an omelet can be used...bacon, fresh sliced tomatoes, fresh spinach, mushrooms, peppers....use your imagination. I LOVE roasted eggplant and roasted red peppers on mine, too. If you're lucky enough to find Beano's white pizza sauce in the squeeze bottle, use that in place of the olive oil, garlic and oregano. Yum!

Whatever the 'ages' of Grandsons or just the 'male-types' in general, I believe will be CRAZY for this recipe and CRAZY about the 'Gal' who makes them this 'Fantasy' "5"FORK!!!!! Pizza!

I have a 14 yr. old grandson and he can eat a large pizza by himself. So I know he will love this one!
