Ingredients

Easy n Delicious Country Apple Pecan Cake With Caramel frosting

1 (18 oz.) pkg. yellow cake mix

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 cup mayonnaise

2 eggs

2 1/2 cup peeled, grated tart apples (4 lg. apples)

1 cup chopped pecans

Combine first 5 ingredients. Beat at medium speed for 2 minutes.

Stir in apples.

Stir in nuts.

Pour into a greased and floured 10 to 12 cup bundt pan or 10" tube pan.

Bake in a preheated oven at 350 degrees F. for 45 to 50 minutes.

Cool cake thoroughly before removing from pan.

(Prepare frosting as cake cooks).

CARAMEL FROSTING:

2 tbsp. butter

1/3 c. heavy cream

2/3 c. brown sugar, firmly packed

1/8 tsp. salt

3 c. confectioners' sugar

Few drops vanilla

Few pecans for garnish (if desired)

Mix butter, cream, brown sugar and salt in saucepan.

Bring to boil, stirring constantly.

Remove from heat, add vanilla, then gradually add

confectioners' sugar to make frosting of spreading consistency.

pan (only). this is super for BIG gatherings.

A ole friend used to bring us one every Christmas
and I figured a alternative! Also wonderful with
