Sausage Stuffed Baked Potatoes Recipe

This is a great way to use leftover baked potatoes. The sausage in the filling adds a unique flavor.

Ingredients
  • 2 leftover baked baking potatoes, OR 2 unbaked ( must be baked for one hour)
  • cooking time is reduced if using leftover potatoes
  • 1 tbsp extra virgin olive oil
  • 2 mild Italian sausages, removed from the casing
  • 1 small onion, finely chopped
  • 4 cloves fresh garlic, finely chopped
  • ½ tsp Italian herb seasoning
  • ½ tsp crushed fennel seeds
  • 1 sweet red pepper, diced
  • 2 tbsp fresh Italian parsley, finely chopped
  • ¼ tsp salt
  • ¾ cup shredded Asiago cheese
  • 1 egg
  • salt and pepper to taste

Directions
  1. Cut the potatoes in half lengthwise
  2. Scoop out the inside with a spoon and reserve in a bowl
  3. Place the potato shells on a baking sheet
  4. Preheat the oven to 400*F
  5. Heat the oil over medium high heat
  6. Add the sausage, onion, garlic, herb seasoning and fennel seeds
  7. Cook mixture about 8 minutes, breaking up any lumps, and until no pink is seen in the meat
  8. Add the parsley and salt
  9. Let this mixture cool slightly
  10. Stir into this ½ cup Asiago cheese and egg
  11. Combine thoroughly
  12. Spoon this mixture into the potato shells
  13. Sprinkle each with the remaining cheese
  14. Bake about 30 minutes, or until golden brown.
