Sausage Stuffed Baked Potatoes

- 2 leftover baked baking potatoes, OR 2 unbaked ( must be baked for one hour) shopping list
- cooking time is reduced if using leftover potatoes shopping list
- 1 tbsp extra virgin olive oil shopping list
- 2 mild Italian sausages, removed from the casing shopping list
- 1 small onion, finely chopped shopping list
- 4 cloves fresh garlic, finely chopped shopping list
- ½ tsp Italian herb seasoning shopping list
- ½ tsp crushed fennel seeds shopping list
- 1 sweet red pepper, diced shopping list
- 2 tbsp fresh Italian parsley, finely chopped shopping list
- ¼ tsp salt shopping list
- ¾ cup shredded asiago cheese shopping list
- 1 egg shopping list
- salt and pepper to taste shopping list
How to make it
- Cut the potatoes in half lengthwise
- Scoop out the inside with a spoon and reserve in a bowl
- Place the potato shells on a baking sheet
- Preheat the oven to 400*F
- Heat the oil over medium high heat
- Add the sausage, onion, garlic, herb seasoning and fennel seeds
- Cook mixture about 8 minutes, breaking up any lumps, and until no pink is seen in the meat
- Add the parsley and salt
- Let this mixture cool slightly
- Stir into this ½ cup Asiago cheese and egg
- Combine thoroughly
- Spoon this mixture into the potato shells
- Sprinkle each with the remaining cheese
- Bake about 30 minutes, or until golden brown.
