Sunny Side Up - Vegetable Casserole

- 1 onion, coarsely chopped shopping list
- 2 large potatoes, peeled and diced into medium sized pieces shopping list
- 4 medium carrots, peeled and sliced into medium sized rings shopping list
- 3 medium zucchinis, diced into medium sized pieces shopping list
- 4 small tomatoes, diced and chopped shopping list
- 1 garlic clove, minced shopping list
- 1/2 cup olive oil shopping list
- 1 Tbsp dried basil or a little less if you are using fresh herb shopping list
- 2 Tbsp red wine vinegar shopping list
- 6 Tbsp parmesan cheese, finely grated shopping list
- Freshly ground black pepper shopping list
- salt to season shopping list
- 3 free range large sized eggs shopping list
How to make it
- Choose a large sized frypan and a large sized pot.
- Put Olive Oil in to the large sized pot over low heat and then add in order, Onions, Potatoes and Carrots. Stir occasionally until vegetables have coloured up slightly.
- Add Garlic and Zucchini, stir to cover with Olive Oil and heat through for 5 minutes.
- Add Basil and stir for 2 minutes.
- Add Vinegar, Tomatoes and 2-3 cups of Water.
- Season with Pepper and Salt.
- Bring to boil and maintain on an active simmer (pot should be bubbling with quite a bit of movement in the dish) for 25 minutes. Potato should break down almost completely and thicken the dish.
- When dish has a stew like thickness transfer all items to the large sized frypan - bring back to a good simmer.
- Now make 3 indentions into the stew at equal distance from each other and crack an egg into each indentation. Place lid (preferably glass) on top and allow to simmer for 10 minutes until eggs are poached on top of the meal.
- Remove from heat and sprinkle with Parmesan Cheese.
- Serve hot (1 egg and surrounds per person) with bread rolls or fresh bread.
