Veggie Jack Salad

- 2 medium cucumbers(or zucchini) sliced shopping list
- 2 medium tomatoes, wedged or cubed(or 1 pint cherry or grape tomatoes) shopping list
- 2 green onions, sliced shopping list
- 6oz monterey jack cheese, cubed shopping list
- 2T dressing quality olive oil shopping list
- 2t balsamic vinegar shopping list
- dash of sugar shopping list
- 1-2T fresh herbs(basil, cilantro,oregano, thyme, chives, parsley, etc(any combination you like) shopping list
- salt and pepper shopping list
How to make it
- Combine veggies and cheese in large bowl and set aside.
- Whisk together oil and vinegar, add sugar, salt and pepper and whisk well.
- Add herbs and mix to "break" herbs and combine.
- Pour dressing over veggies and toss to coat.
- Refrigerate at least 1 hour.
