I don't remember where this recipe came from, but it is delicious and easy.

Ingredients
  • 2 Tbs olive oil
  • 2 Tbs butter or margarine
  • 1/2 cup minced onion
  • 1 cup canned crushed tomatoes
  • 1/2 cup heavy cream
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/3 cup vodka

Directions
  1. In a large skillet, heat the oil and butter over medium heat until the butter melts. Add the onion and saute' until tender but not browned, about 2 minutes. Add the crushed tomatoes, cream, salt, and pepper. Cook for 1 minute, stirring occasionally.
  2. Add the vodka and continue cooking for 2 minutes, stirring
  3. occasionally, until the vodka evaporates slightly and the sauce
  4. thickens.
  5. Serve over pasta of your choice.
