Ingredients

1/3 cup hot water

1/2 cup butter, melted

2 10-ounce packages frozen chopped spinach, cooked and drained

2 cups herbed-seasoned stuffing mix

1 cup grated parmesan cheese

1 clove garlic, minced

1/2 pound hot bulk sausage, browned and drained

2 eggs, lightly beaten

3/4 pound bacon

Directions

In a large bowl, stir hot water into butter

Add spinach, stuffing mix, cheese, sausage, garlic, and eggs

Mix well

Chill one hour

Preheat oven to 375

Shape chilled mixture into 3/4 inch balls

Cut bacon strips into thirds

Wrap one piece around each spinach ball

Place on a foil-lined baking sheet

Bake 35 min., turning once

These may be frozen and stored for future baking

Serve warm-Makes 4 dozen
