Ingredients
  • 1/3 cup hot water
  • 1/2 cup butter, melted
  • 2 10-ounce packages frozen chopped spinach, cooked and drained
  • 2 cups herbed-seasoned stuffing mix
  • 1 cup grated parmesan cheese
  • 1 clove garlic, minced
  • 1/2 pound hot bulk sausage, browned and drained
  • 2 eggs, lightly beaten
  • 3/4 pound bacon

Directions
  1. In a large bowl, stir hot water into butter
  2. Add spinach, stuffing mix, cheese, sausage, garlic, and eggs
  3. Mix well
  4. Chill one hour
  5. Preheat oven to 375
  6. Shape chilled mixture into 3/4 inch balls
  7. Cut bacon strips into thirds
  8. Wrap one piece around each spinach ball
  9. Place on a foil-lined baking sheet
  10. Bake 35 min., turning once
  11. These may be frozen and stored for future baking
  12. Serve warm-Makes 4 dozen
