When baking potatoes, bake up a bunch and save the leftovers for this tasty potato cheese bacon casserole.

Ingredients
- 8 cooked, peeled and diced potatoes
- 1 lb American cheese, sliced in strips
- 1 cup mayo
- 1/2 cup chopped onions
- salt and pepper to taste
- 1/2 lb partically fried bacon, chopped
- 1/4 cup sliced stuffed olives
Directions
- Combine first 4 ingredients and season.
- Put all in a 9 x 13 inch baking dish.
- Top with bacon and olives.
- Bake 1 hr. at 325 degrees.
