Braised Pork With Chilies Recipe
BRAISED PORK WITH CHILIES This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Olsen Estate in Grand Prairie, Texas in 1982.

Ingredients
  • 3 whole star anise
  • 3 dried red chilies
  • 2 cinnamon sticks
  • 1/4 cup peanut oil
  • 4 pounds pork shoulder trimmed and cubed
  • 3 cups chicken broth
  • 2 cups rice wine
  • 1 cup dark soy sauce
  • 1/2 cup light soy sauce
  • 1/4 cup granulated sugar
  • 8 cloves garlic crushed
  • 6 whole green onions
  • 5 thin slices ginger root
  • 1 teaspoon freshly ground black pepper
  • 2 cups steamed rice

Directions
  1. Wrap star anise, chilies and cinnamon sticks in cheesecloth then set aside.
  2. Heat oil over medium high heat in Dutch oven.
  3. Add pork in batches then brown on all sides about 5 minutes then remove.
  4. Combine broth, wine, soy sauces and sugar in Dutch oven then cook 3 minutes.
  5. Add spice bundle, garlic, green onions, ginger root and pepper then reduce heat.
  6. Add pork then simmer covered until pork is tender about 2 hours.
  7. Remove spice bundle then serve with rice.

Sounds good ... I'd chop the chillies and leave them out of the spice bundle, just adding with the garlic, ginger, etc.
