Ingredients

How to make it

  • Wash and drain lentils (can use other dried beans but you'll have to cook the mixture at least 3 hours)
  • Chop all vegetables in small dice
  • Saute in olive oil until tender
  • add bay leaves & lentils & continue to saute
  • Mix in seasonings and salsa
  • Add broth and box of frozen spinach or squash
  • Add parmeson rind (optional)
  • Let cook for at least 1 1/2 hours until everything is tender.

    Wow ~ your mom must be quite a lady. This soup is packed with flavor and it's so healthy, what a perfect dish to make for those unfortunate people. I thought my idea of the salsa was unique but obviously it's not! I don't mind because it's wonderful and great to share.
