The best lentil vegetarian soup

- 16 oz. bag dried lentils shopping list
- 3 T. olive oil shopping list
- 3 chopped carrots shopping list
- 1 c. chopped celery shopping list
- 1 c. chopped onion shopping list
- 2 chopped jalapeno or other peppers shopping list
- 5 garlic cloves chopped (more if you like) shopping list
- 2 bay leaves shopping list
- rind of parmeson if you have it shopping list
- 16 oz. jar salsa of your choice shopping list
- 8 c. organic vegetable broth (or chicken) shopping list
- 10 oz. box frozen spinach or frozen yellow squash shopping list
- 1 t. cayenne shopping list
- 1 t. cumin shopping list
- salt and pepper to taste shopping list
How to make it
- Wash and drain lentils (can use other dried beans but you'll have to cook the mixture at least 3 hours)
- Chop all vegetables in small dice
- Saute in olive oil until tender
- add bay leaves & lentils & continue to saute
- Mix in seasonings and salsa
- Add broth and box of frozen spinach or squash
- Add parmeson rind (optional)
- Let cook for at least 1 1/2 hours until everything is tender.
