This soup can be made with lentils or beans of your choice and lots of veggies. The secret ingredients are salsa & a parmeson rind ~ they both add incredible flavor!

This soup can be made with any dried beans but they must be soaked overnight (or quick soak). I just made this recipe with baby lima beans and boy was it tasty. My husband likes to motor boat it which really "marries" the flavors. It's also great with black beans, kidneys or a combination of the two (great song by the way by Big Brother & the Holding Company!) I know...I'm dating myself!

Wow ~ your mom must be quite a lady. This soup is packed with flavor and it's so healthy, what a perfect dish to make for those unfortunate people. I thought my idea of the salsa was unique but obviously it's not! I don't mind because it's wonderful and great to share.
