Sunny Skies Muffins

From Sunny Skies Inn in Manitou Springs at the foot of Pikes Peak in Colorado. A wonderful Inn with super cuisine and a superior bed and breakfast.
Ingredients
- 2 1/2 C. flour shopping list
- 1/2 C. sugar shopping list
- 1 T. baking powder shopping list
- 1/2 t. salt shopping list
- Add: shopping list
- 1 C. drained canned crushed pineapple shopping list
- 1/4 C. coconut shopping list
- blueberries shopping list
- Mix together very well, then add to dry ingredients: shopping list
- 1 egg shopping list
- 1 C. low-fat milk shopping list
- 1/4 C. canola oil shopping list
- Sprinkle tops with sugar to make them crunchy shopping list
How to make it
- Preheat oven to 375 degrees
- :
- Cook in foil cupcake liners in muffin pan for 25 minutes until lightly golden brown.
