From Sunny Skies Inn in Manitou Springs at the foot of Pikes Peak in Colorado. A wonderful Inn with super cuisine and a superior bed and breakfast.

Ingredients
- 2 1/2 C. flour
- 1/2 C. sugar
- 1 T. baking powder
- 1/2 t. salt
- Add:
- 1 C. drained canned crushed pineapple
- 1/4 C. coconut
- blueberries
- Mix together very well, then add to dry ingredients:
- 1 egg
- 1 C. low-fat milk
- 1/4 C. canola oil
- Sprinkle tops with sugar to make them crunchy
Directions
- Preheat oven to 375 degrees

- Cook in foil cupcake liners in muffin pan for 25 minutes until lightly golden brown.
