My Basic Dressing For Tomato Salad Recipe
I tend to like more vinegar in my dressings but this can be changed to suit your personal taste. This dressing is what I use on MY Summer Garden Tomato Salad.

Ingredients
  • ½ cup extra virgin olive oil
  • ½ cup red wine vinegar
  • ¼ tsp. sugar
  • ½ tsp. sea salt
  • 1 tsp. dried basil, crushed
  • 1 tsp. dried oregano, crushed
  • 1 tsp. minced garlic
  • 1 tsp. zest from lemon
  • 1 tbsp. fresh lemon juice
  • ¼ tsp. red pepper
  • 1 tbsp. finely grated Parmesan cheese (optional)

Directions
  1. Combine all ingredients and whisk.
  2. (Add extra dried or fresh basil to taste.)
  3. Allow flavors to blend for one hour before using.
  4. Can be made in advance and stored for several weeks, without the Parmesan cheese.
  5. Use with My Summer Garden Tomato Salad

Mmmm...I'm definitely keeping this one. I bet the lemon zest just makes this sing...I wish fresh, local tomatoes were here now!


Freshly squeezed OJ and zest are an intesting change, which is great on a green salad. I think I like this dressing with lemon on my tomato salad though.

I'm earmarking this one for when my tomatoes come in...they're just thimble sized now. Basil and tomatoes is a classic match. A little torn basil leaves on top of the tomatoes and under this dressing would probably be too much for the taste buds it would be so good. Thanks for sharing!



Yes, basil is so good with tomatoes! I don't think you can beat the combination!
Now I will have to rush out and throw more basil in the garden!

It sounds nice & refreshing with young freshly plucked tomatoes or what about a green herby salad

Alterations


For a differnt flavor, substitute freshly squeezed OJ and orange zest for the lemon.


Use fresh herbs when availabe for a much better flavor. More fresh basil is also a plus.
