Corn Fritters

- 2 cups of canned or fresh corn shopping list
- 1 egg shopping list
- Add milk to liquid from corn to make 1 cup shopping list
- 3/4 tsp. salt shopping list
- 2 tsp. baking powder shopping list
- 1 and 1/2 cups flour shopping list
How to make it
- Drain 2 cups of canned corn - reserve the liquid
- Add milk to the liquid to make one cup
- Sift 1 and 1/2 cups flour, 2 tsp, baking powder, 3/4 tsp. salt
- In a separate bowl combine 1 egg beaten, milk mix, corn
- Add dry ingrediants and mix together
- Drop batter from a Tablespoon into a pot of hot oil
- When lightly brown, turn fritters over and brown the other side.
- Drain on paper towels and serve immediately
- Goes well with chicken or ham
