These are very good, and fairly easy. My picky kids even love them! You can freeze these for future use after you roll them in the bread crumbs. Just make sure you wrap them good. They will last up to 2 months in the freezer.

Ingredients
  • 8 boneless skinless chicken breast halves
  • 8 thin slices deli ham
  • 4 slices provolone cheese, halved
  • 2/3 c. seasoned bread crumbs
  • 1/2 c. grated Romano or Parmesan cheese
  • 1/4 c. minced fresh parsley
  • 1/2 c. milk

Directions
  1. Flatten chicken to 1/4".
  2. Place a slice of ham an d half slice of cheese on each piece of chicken.
  3. Roll up from a short side and tuck in ends. Secure with a toothpick.
  4. In a shallow bowl, combine crumbs, grated cheese and parsley. Pour milk into another bowl.
  5. Dip chicken rolls in milk, then roll in crumb mixture.
  6. This is where you can wrap them and freeze for up to 2 months.
  7. Grease a baking sheet.
  8. Bake in a preheated 425 oven for 25 minutes or until juices run clear.
  9. Remove toothpicks and enjoy!

This was perfect! I made it as written except I used a whole slice of cheese instead of half. You can see it oozing out! I love provolone! This is like a lower fat version of chicken cordon bleu. I served this with "Crash Hot Potatoes" from The Pioneer Woman's website. I just need to add a gravy to it next time. I will definitely be making this again! Thanks CG! I hope you like my photo. :)
