How to make it

  • On a big pot put the potatoes, the onions, garlic, half the quantity of olive oil and bring to boil.
  • Add the whole "chouriço" (with the skin on, remove it later).
  • Let it boil slowly until the potatoes and onions are well cooked.
  • Take the "chouriço" to a plate and reserve.
  • Use a hand blender to puree the soup and season with salt if needed - sometimes the "chouriço" provides enough salt to season the soup.
  • Heat it again and when it starts to boil add the kale. Let it cook for 10 minutes or more, depending on your taste.
  • Serve in bowls with a couple of slices of "chouriço" and a thin bit of olive oil.

    Another delicious sounding one...similar to ones I've had, but not exact...I love that there's a chorizo type sausage(probably what I'll have to use, cus it's what I'll be able to find), yet it's similar to a wonderful Italian-style soup I make. It's still too hot here, but soup season is just around the corner...this one is getting saved! :)
