Shrimp Salad Stuffed Tomatoes Recipe

Ingredients

2 large ripe tomatoes

1/2 pound cooked shrimp, lightely chopped (buy from deli, ready to go)

2 tablespoons mayonnaise

1 tablespoon chopped fresh dill

1 tablespoon capers

Directions

Remove tops of tomatoes and core. Scoop out insides, discarding the seeds but keeping the flesh. Reserve tomato shell.

Chop flesh and add to a mixing bowl. In the same bowl, add shrimp, mayonnaise, dill and capers and stir to combine. .

Season with salt and pepper.

Stuff mixture evenly in tomatoes. Serve tomatoes surrounded by side salad. Enjoy
