Hey, we're southern, remember...we fry everything...including cheesecake! A fairly simple, but different dessert that goes great with a Mexican themed meal. Plan ahead, though, these should be fried, frozen.

Ingredients
  • 2-8oz cream cheese, softened
  • 2T white or powdered sugar
  • 4T flour
  • 2tsp vanilla
  • 2tsp fresh lemon juice
  • 1 can apple pie filling(or canned apples, which is what I prefer)
  • 10 large flour tortillas
  • 1/4 cup white sugar
  • 3T cinnamon
  • oil for frying
  • caramel ice cream topping, optional

Directions
  1. Combine cream cheese and 2T white or powdered sugar in mixer bowl and beat until smooth and creamy.
  2. Add flour and mix to combine
  3. Add vanilla and lemon juice and mix, again
  4. Fold in apples and mix until just combined.
  5. Warm tortillas in oven, microwave or skillet til just pliable.
  6. Add about 1/2 cup of filling to tortilla and wrap them "burrito" style, making sure to fold ends.
  7. Wrap each chimichanga tightly in plastic wrap and place in freezer, seem side down, for a couple hours, at least.
  8. Heat oil to about 340 and carefully drop chichanagas in oil seem side down, first.
  9. When lightly browned, carefully turn and brown other side.
  10. Remove from oil. Continue with however many you are making, frying no more than 2 at a time, because the oil will cool too much.
  11. Allow finished chimis to cool, slightly
  12. Mix remaining white sugar and cinnamon in large, shallow bowl or plate.
  13. Roll each chimi in cinnamon sugar mixture.
  14. Serve drizzled in, or on top of, caramel sauce, if desired

Are you kidding me with this one Keni!!! I feel my jean size going up as we speak....is vanilla bean ice cream ok to serve along side!! LOL....sounds scrumptious!

I haven't made this yet but does 2T of sugar stand for 2 tablespoons? If so, that seems like a very small amount of sugar for 16 ounces of cream cheese, I am an avid cheesecake baker and was looking for a good fried cheesecake recipe and this sounded good until I seen the 2T sugar, for a cheesecake with 16 ounces cream cheese I typically use a cup of sugar...is this dessert lacking in sweetnesss? Thanks, just trying to learn how to make this dessert.
