Dessert Apple Cheesecake Chimichangas

    A nice quick cheesecake dessert if you don't mind the overnight wait for the burritos to freeze. Lightly crunchy on the outside. Sweet and chilled on the inside.
    Deep frying them doesn't heat up the frozen filling, it just thaws it and leaves the stuffing nicely chilled.
    You will need to pin the seam on the chimichanga with part of a toothpick to keep the flap from opening up even if it is frozen. Look at my pic for an example.
    If you are using enough oil for the chimichangas to be completely submerged, they will have a difficulty flipping to the other side for browning because air will accumulate under the top side of the tortilla skin and prevent flipping. (You can flip them but they will flip back) So only use a couple of inches of oil for frying and let the size of the chimichangas be your friend.
    I didn't have any trouble at all with the oil keeping temperature since I used 10 cups of oil.
    This recipe made only 8 chimichangas using a half cup measure. A third of a cup filling will get you a few more.
    I like the technique of wrapping the desserts tightly in plastic wrap for freezing. It gives them a well defined shape. Again, pinning the seam with toothpicks will keep the shape well when frying.
    Recipe only needs the syrup if you need this dessert to be extra sweet. It is fine straight up.
    Mother enjoyed these as did I.
    Used Sauteed Apples as the apple portion of the filling.

    Filtered my old oil, that gave my last attempt at chimichangas a darker than desired outcome, through some muslin then a coffee filter to extend its life.

    Holy cow... thanks, again, P7O! This recipe was a long time ago, and before I got more careful with my instructions.... I'm SO glad you thought they were sweet enough... I did edit the recipe after the question posed, but I didn't actually CHANGE the recipe, cus I didn't think it needed it.

    I do know I didn't have to toothpick mine..but, not sure why that would be. I also usually make these up in the late morning or early afternoon and have 'em for dessert that night, so they can be ready in just a couple hours....IF you don't wanna wait over night, luv! hehehe

I rolled in powdered sugar at the end and that got a little heavy, but not as bad as my picture shows :) I used homemade apple pie filling and didn't have proper frying equipment or even enough oil, but in spite of my short comings, these came out excellent.     I don't think the filling is supposed to be warm, one of the reasons the chimichangas are frozen before fried.

    It doesn't take long to fry the tortilla shell to a golden brown and it keeps the filling from getting warmed up. It IS a dessert chimichanga and IMHO deserves to be served with the guts still cold.
