i found this while looking for another recipe and it is chock full of raisins, nuts, coconut, carrots and apples..sounded like a health start to a morning or a good afternoon snack.... I haven't made these...

I added 1 cup of each: raisins and coconut, instead of the 1/2 c. listed. I also added an extra small apple chunked, along with two small grated ones. I'm thinking about adding drained crushed pineapple and replace the pecans with walnuts next time just for a change...
I think this recipe could be tweaked quite a bit to add any of your favorites!(Sorry...I hardly ever just make a recipe straight up...!)
...I could try dates, dried apricots,... or ....LOL...on it goes w/ the possibilities!...
I know already that I will be using this recipe throughout the years to come! LOL

As soon as I saw this recipe I got up and made it. Wow! You need a large bowl....it makes about 24 muffins (cupcake size). These are delicious! So packed with good stuff. This is definitely a keeper! 'Wishin' I had company with all these good muffins...!
