Peanut Butter Cream Pie Recipe
An Emeril Lagasse recipe; I was watching the Food Network again (always) and saw this yummy pie. Simple to make and oh-so-good. Fluffy, peanut-buttery yumminess! I've adapted it ever-so-slightly.

Ingredients
  • 8 ounces cream cheese, at room temperature
  • 3/4 cup confectioners' sugar
  • 1/2 cup crunchy peanut butter
  • 2 tablespoons milk
  • 1/2 cup chopped roasted peanuts
  • 2 cups heavy cream, whipped until thick (about 4 cups whipped)
  • 1 prepared 9-inch graham cracker crust
  • 1/2 cup chopped salted peanuts
  • 1/2 - 1 cup chocolate sauce
  • 1/4 pound chocolate, shaved into curls, optional, for garnish
  • Fresh mint sprigs, optional, for garnish

Directions
  1. * Cook time is chill time.
  2. Using an electric mixture, fitted with the whip attachment, beat the cream cheese and sugar until smooth. Add the peanut butter, milk and roasted peanuts and beat well.
  3. Carefully fold 2 cups of the whipped cream into the cheese mixture.
  4. Pour the filling into the prepared crust. Place the pie in the refrigerator and chill completely, about 2 hours.
  5. When ready to serve, spread remaining whip cream (whip in a little additional powdered sugar to sweeten slightly, if desired) over the top of the pie. Drizzle wtih chocolate syrup; sprinkle salted peanuts on top. Slice into 8 slices.
  6. Garnish individual slices with chocolate curls and sprigs of mint, if desired.

'Way too good for our own good!

1972?! I was there 1971-August 1972; I had fallen in love with a German student, and returned the winter of '73 after I graduated. I discovered immediately that being a working-class German was not at all the same thing as being a student. Everything fell apart. Oh well.

I was definitely in love with the museums and concert halls (also the Viktualienmarkt--remember? near Marienplatz?). I particularly loved the museum of Greek etc. antiquities. I was able to use my university student ID to get preposterously low prices for tickets into operas, chamber concerts, church concerts. What a dream. And the Englischer Garten! Still, angry Germans are angry Germans, nicht wahr? and there did seem to be a lot of them. My husband and I returned in 1999 to visit a girlfriend and her husband and to catch the eclipse, and the Germans were just as doggy as ever (and I wasn't nearly as cute as I had been in 1972), even with my husband sitting next to me and glaring at them. Such a mixture: so many things about it that I still cherished, and all the things that made it not work out for me as a place to live.


Well....if I could rate it higher I sure would!


One of my all-time fave desserts - this is a keeper...good, good stuff - so rich and decadent beyone belief...what more could a person want?!
