This recipe is similar to my Parmesan Chicken I have posted on here. But with my favorite new bread crumb, The Panko! Light and flakey and so good. No eggs, just lotsa butter , dijon and garlic!

Ingredients
  • 4 Chicken Breast halves, skinned and boned
  • 1/2 Cup Butter
  • 1 Garlic Clove, minced
  • 1/3 Cup Dijon Mustard
  • 1 1/2 Cups Panko Bread Crumbs
  • 1/3 Cup grated Parmesan Cheese
  • Prep time includes chill time.

Directions
  1. Heat butter and garlic in small skillet, simmer 5 minutes.
  2. Stir in mustard and mix well. Remove from heat and cool slightly.
  3. Combine Panko and Parmesan on small plate.
  4. Dip chicken in butter/garlic mixture, then dip in The Panko mixture,pat the crumbs on to coat each chicken piece well.
  5. Cover and chill the chicken at least 2 hours to set coating.
  6. Bake at 350 for 35 to 40 minutes until golden brown.
  7. Delicious, serve with Dijon Mustard Sauce, or top with your favorite marinara.

Just so happens that I bought Panko crumbs last week! Never used them. . . . till now! Thanks. Looks good.

O.K. Marky-My youngest boy is going to love this. He wants chicken everyday and I really have run out of ideas, kind of. He wants battered ( I have called the police) or grilled chicken and doesn't like microwaved anything. He will want this continually. Thank You-Sas I need a cocktail!
