Italian -semolina -dumplings

- 2- cups milk shopping list
- 1 - tablespoon butter shopping list
- 1/2 -teaspoon salt shopping list
- a pinch of freshly grated nutmeg shopping list
- ground white pepper....to taste shopping list
- 1/2 - cup semolina ( or farina) shopping list
- 2- eggs , beaten shopping list
- 1/2 - cup grated fresh parmesan cheese shopping list
- for garnish.......... shopping list
- 2 tablespoons melted butter shopping list
- 1- tablespoon of grated parmesan cheese shopping list
How to make it
- Butter a cookie sheet and set aside.
- in a heavy saucepan, combine the milk, butter, salt, nutmeg,and pepper and bring to a boil over moderate heat.
- slowly add the semolina , stirring constantly.
- reduce the heat to low and cook until very thick and a spoon will stand up in it unsupported in the center of the pan.
- remove from the heat add the eggs and parmesan cheese and mix well.
- spread on a cookie sheet in a rectangle 1/2 inch thick.
- refrigerate until firm.
- cut into rounds about 1-1/2 inches in diameter( or cut into squares or triangles)if you prefer...........
- arrange in a greased casserole or baking dish, slightly over lapping.
- drizzle with the melted butter and sprinkle with the parmesan cheese . bake in a preheated oven 350 degrees f. ...... for 20 minutes
- serve hot
- makes 3-4 servings...............
