How to make it

  • Butter a cookie sheet and set aside.
  • in a heavy saucepan, combine the milk, butter, salt, nutmeg,and pepper and bring to a boil over moderate heat.
  • slowly add the semolina , stirring constantly.
  • reduce the heat to low and cook until very thick and a spoon will stand up in it unsupported in the center of the pan.
  • remove from the heat add the eggs and parmesan cheese and mix well.
  • spread on a cookie sheet in a rectangle 1/2 inch thick.
  • refrigerate until firm.
  • cut into rounds about 1-1/2 inches in diameter( or cut into squares or triangles)if you prefer...........
  • arrange in a greased casserole or baking dish, slightly over lapping.
  • drizzle with the melted butter and sprinkle with the parmesan cheese . bake in a preheated oven 350 degrees f. ...... for 20 minutes
  • serve hot
  • makes 3-4 servings...............
