Eastern Shore Spoonbread Recipe
This light corn bread, its best served with chilli, fish or poultry.

Ingredients
  • 1 cup white corn meal
  • 2 cups boiling water
  • 1/4 tsp. salt
  • 1/2 teaspoon of sugar
  • 2 Tablespoon butter
  • 4 eggs, beaten
  • 1 cup cold milk

Directions
  1. Grease your 9-inch Iron skillet with about 1 tablespoon of oil.
  2. Bring water to a boil. Stir in corn meal. Cook 1 minute and remove from heat. Add butter and beat well. Add beaten eggs and beat again. Add milk, salt and sugar. Pour into hot Iron skillet. Bake at 400 degrees for 25 minutes. Serve at once with butter.
