How to make it

  • Preheat oven to 450 degrees.
  • Steam or lightly boil broccoli. Drain liquid and place cooked broccoli in a big bowl.
  • Add bread crumbs, cheese, and egg. Stir until all ingredients are incorporated into a dough. Add in some milk (usually 1 tbsp or so) if mixture is too dry. Form into individual 1 1/2 inch balls.
  • Cover baking sheet with aluminum foil. Spray foil with cooking spray. Place balls on foil about an inch apart. Bake at 450 degrees for 5 minutes. Turn the balls over and bake for an additional 3 minutes.

    Thanks for this recipe! Im on the go a lot with my 10 month old who is just starting to eat finger food by himself. I chose this recipe so that I could have a healthy and portable finger food while in the car (or running late and no time for sit down breakfast!) and it came out perfect! It was easy and we already had all the staple ingredients on hand. I did modify it a little for my baby's needs (smaller bite sized pieces, about 1/4 tsp sizes, as well as added a little shredded chicken for protein). I also added a little seasoning and after I gave him my son his first bite, he was smiling and squealing and kept following me around for more "broccoli bites". Now I will make big batches for travelling with baby. Thanks for the recipe!

    I made these exactly as instructed and am only eating them because I made them. They are super dry and crumbly. Like, need to drink water after every bite dry. I love the idea though. If I made them again, I'd use 1 1/2 cups broccoli, 2 eggs, 1 cup cheese, and only 1 1/2 cups breadcrumbs, if that.
