Chocolatey Peanut Buttery Bars

- 2 cups chocolate cookie crumbs, finely ground shopping list
- 1/2 cup plus 2 Tbsp. butter shopping list
- 1 pound cream cheese shopping list
- 2/3 cup sugar shopping list
- 2 large eggs shopping list
- 3/4 cup smooth peanut butter shopping list
- 1/2 cup heavy cream shopping list
- 3-1/2 ounces semisweet or bittersweet chocolate, finely chopped shopping list
How to make it
- Preheat oven to 325 Degrees F.
- Spray a 13 x 9 inch pan with PAM or other cooking spray.
- In a medium saucepan over a low heat melt butter and stir in cookie crumbs until combined.
- With your fingers press the mixture evenly into the bottom of the pan. Bake on the middle rack for 15 minutes or until it appears dry.
- Remove from oven and set aside.
- Using an electric mixer, beat together cream cheese and sugar til smooth.
- Beat in eggs and then stir in peanut butter until creamy.
- With a rubber spatula spread the peanut butter mixture evenly over the baked crust.
- Bake on a middle oven rack for 10-15 minutes until set.
- Allow pan to cool on a wire rack to room temperature.
- Bring the cream to a boil then remove from heat and add the chopped chocolate.
- Using a wire whisk, beat until smooth.
- With a rubber spatula, spread your chocolate mixture over the peanut butter mixture evenly.
- Refrigerate until firm.
- Using a large and sharp knife, cut into bars wiping the knife clean with a damp paper towel each time you slice.
- These can be stored in an airtight container in the refrigerator for 3 days or frozen up to 1 month.
- Note: The number of squares depends on the size they are cut.
