How to make it

  • Preheat oven to 325 Degrees F.
  • Spray a 13 x 9 inch pan with PAM or other cooking spray.
  • In a medium saucepan over a low heat melt butter and stir in cookie crumbs until combined.
  • With your fingers press the mixture evenly into the bottom of the pan. Bake on the middle rack for 15 minutes or until it appears dry.
  • Remove from oven and set aside.
  • Using an electric mixer, beat together cream cheese and sugar til smooth.
  • Beat in eggs and then stir in peanut butter until creamy.
  • With a rubber spatula spread the peanut butter mixture evenly over the baked crust.
  • Bake on a middle oven rack for 10-15 minutes until set.
  • Allow pan to cool on a wire rack to room temperature.
  • Bring the cream to a boil then remove from heat and add the chopped chocolate.
  • Using a wire whisk, beat until smooth.
  • With a rubber spatula, spread your chocolate mixture over the peanut butter mixture evenly.
  • Refrigerate until firm.
  • Using a large and sharp knife, cut into bars wiping the knife clean with a damp paper towel each time you slice.
  • These can be stored in an airtight container in the refrigerator for 3 days or frozen up to 1 month.
  • Note: The number of squares depends on the size they are cut.
