Ingredients
  • 1 1/2 cups peanut oil or Olive Oil if preferred
  • 3 to 4 bunches of scallions
  • (1pound), washed, well dried, trimmed into 2-inch pieces, white portions lightly smashed
  • Glass jar with Lid
  • Wok

Directions
  1. This makes about 1 1/2 cups.
  2. Heat wok over high heat for 30 seconds.
  3. Add oil and scallions, stir and mix well, and make certain scallions are immersed in oil.
  4. Bring to a boil.
  5. Lower the heat, and simmer the oil and scallions for 20 minutes, stirring occasionally, until scallions brown.
  6. Turn off heat, strain oil through a fine strainer into a bowl, and cool to room temperature.
  7. Pour into a glass jar, cover with Lid, and refrigerate until needed.
