Ingredients

How to make it

  • Preheat grill or pan over medium high heat.
  • Combine ground bison, cumin, chipotle chili powder and herbs, blending to distribute seasonings thoroughly.
  • Add mushrooms, onion and cheese and mix until combined. Season with salt and pepper.
  • Divide mixture evenly into four sections and form into patties.
  • Place burgers on grill and reduce heat slightly. If pan-frying these, you may want to add a little oil and/or butter to prevent patties from sticking) Grill 3 to 5 minutes, flip over and grill an additional 3 to 5 minutes.
  • Serve on toasted whole wheat buns with your choice of garnishes - more sauteed mushrooms, carmelized onions, and some chipotle ranch dressing are my faves!

    ooooooo... I still have to grind some of this stuff up and cook with it ground. I was planning on making galumpkis and Jamaican Beef patties. Heck now I can throw burgers on there too.
    Something else I found this summer was TUNA burgers. THIS would make an excellent base for tuna burgers. Just add avocados, and a lil bread crumbs.

    Hey Christine! Made these, tonight, using venison, I hope you don't mind! :) My boyfriend grew up in Montana, so he's no stranger to bison, but around here, we don't see so many of those. ;) (I know you can buy it, but we have SOO much venison! :) Anyway, they were fantastic. I followed the recipe other than the above, and I used fresh herbs instead of dried, and probably doubled the chipotle. They were firm, but not dry, and full of flavor. Served them with Muenster cheese, fresh lettuce and tomatoes, and we had Chefelaine's French Fried Potato Skewers along side, with my own dipping sauce. Thank you for the recipe. I added a photo, but please just remove it if you don't like it! :)

    Hi Christine....I hope that you remember me asking in the AR exchange about bison a few months back...I was goin to try it for the first time and make burgers, and you gave me this recipe.....I made and loved it. This recipe was my first introduction to this meat and was excellent! I am so glad to see it here!! Lori
