BEER RICE This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Brooks Estate in Richardson, Texas in 2006.

Ingredients
  • 1 cup brown rice
  • 1 cup beer allowed to go flat
  • 1-1/4 cups chicken broth
  • 1 tablespoon butter
  • 1/4 cup peanuts salted and coarsely chopped
  • 1/2 teaspoons salt
  • 1/2 teaspoons freshly ground black pepper

Directions
  1. Preheat oven to 350 then place all ingredients in lightly coated casserole dish.
  2. Cover and bake until all liquid is absorbed about 1-1/4 hours.

We always have beer on hand here and bought a lot of rice when everyone thought there would be a shortage in rice, so I'm ready to try this recipe.Sure sounds delicious!
