Chicken With Pomegranate Syrup And Walnuts Recipe
CHICKEN WITH POMEGRANATE SYRUP AND WALNUTS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Jacobs Estate in Mabank, Texas in 1987.

Ingredients
  • 2 tablespoons vegetable oil
  • 2 pounds skinless chicken legs and thighs
  • 1/2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 1 large white onion minced
  • 1/4 cup pomegranate syrup
  • 1 tablespoon granulated sugar
  • 2 cups chicken stock
  • 1 cup ground walnuts

Directions
  1. Heat oil in a cast iron Dutch oven or other heavy pan.
  2. Season chicken with salt and pepper then brown and set aside discarding most of the oil.
  3. Brown onion in remaining oil then return chicken to pan and add syrup and sugar.
  4. Stir to coat chicken pieces then add stock and ground walnuts and stir to mix.
  5. Reduce the cover and cook 30 minutes stirring well and sauce is quite thick.
  6. Adjust seasoning with sugar or lemon juice if desired then serve.
