Eight Hour Chocolate Brandy Cheesecake

- CHILL TIME: 2 HOURS shopping list
- ----------------------------------- shopping list
- 4 oz. unsweetened chocolate melted and cooled shopping list
- 1 teaspoon unsalted butter shopping list
- 1/3 cup graham cracker crumbs, or other plain cookie crumbs shopping list
- 2 pounds cream cheese, at room temperature shopping list
- 1 cup granulated sugar shopping list
- 1/4 cup brandy shopping list
- 2 tablespoons vanilla shopping list
- 5 eggs shopping list
- 1/4 cup sweet chocolate chips or white chocolate chips for a black and white cake shopping list
How to make it
- Preheat the oven to 200° F. Grease an 8 inch soufflé dish or springform pan with the butter and dust with cracker crumbs.
- In a large bowl, using an electric mixer, beat cream cheese until fluffy. beat in sugar, brandy and vanilla until very smooth. beat in eggs, just long enough to incorporate.
- Add cooled melted chocolate gently and lastly the chips
- you can also just drop chips on top for a concentrated flavor
- Pour into prepared pan and bake for 8 hours, until set. Let cool in pan, then unmold.
- Cover and refrigerate for at least 2 hours, until chilled
