Cheesy Beef and Spinach Casserole

- 1-1/2 lb ground beef shopping list
- 1 medium onion chopped shopping list
- 3 garlic cloves chopped shopping list
- 2 cans drained (4 oz) mushrooms shopping list
- 1 tsp salt shopping list
- 1 tsp oregano shopping list
- 1/2 tsp pepper shopping list
- 1 tsp garlic powder shopping list
- 1 tsp smoked paprika shopping list
- 1/2 cup chopped (drained well) roasted peppers shopping list
- or 1 red or green pepper chopped shopping list
- 3 pkgs (10 oz) frozen spinach, thawed & squeezed well (I just 2 large bags of fresh spinach, cooked in water till wilted and squeezed the heck of of it) shopping list
- 1 can of condensed cream of mushroom or celery soup shopping list
- 1-1/4 cup sour cream shopping list
- 8 ozs shredded mozzerella cheese shopping list
- 1/2 cup parmesan cheese shopping list
- 1 bag of wide egg noodles shopping list
- 4 tbsp butter shopping list
- paprika, parsley shopping list
How to make it
- In large skillet, cook beef till most of pink is gone, drain well
- Add about 1 tbsp olive oil to meat and then add chopped onions, garlic, mushrooms and peppers and cook till tender (do not overcook)
- Add seasonings and stir
- Add soup, spinach, sour cream and blend thru well
- Add mozzerella cheese & Parmesan
- Transfer to a greased baking pan(9 x 11)
- Bake uncovered for 30 minutes at 350 till hot & bubbly
- In the meantime, cook noodles in salted water and drain well done.
- Add butter to hot pan and add parsley & paprika
- Stir in noodles and just cook all is mixed
- serve over buttered noodles
